Soup is the perfect food for this time of the year. This easy tasty soup is ready to eat in 20 minutes. Black beans and diced tomatoes all cooked together seasoned with a little bit of paprika to give it a spicy kick. It is a quick and healthy soup that is naturally vegan and gluten-free, perfect for every diet. Serve this soup with your favorite bread or crackers for a quick meal that can be ready in less than 30 minutes.

This soup is so easy to put together with ingredients that you may already have in the pantry. Black beans, canned diced tomatoes, vegetable broth, salt and paprika is all that you need to make this easy soup. Combine all of the ingredients into a large saucepan and place it over medium heat. Let the soup simmer for about 10 minutes for all of the ingredients to heat through. Using a immersion blender, blend the soup until it is smooth. Or you can also blend the soup in batches until it is smooth. You can make the soup as smooth as you would like it, if you would rather some whole black beans in your soup you can blend only some of it. Let the soup simmer for another 5-10 minutes.

Ingredients
  

  • 2 ( 15 oz.) cans black beans, drained
  • 1 ( 14 oz.) can diced tomatoes, undrained
  • 2 cups vegetable broth
  • 1/2 teaspoon salt
  • 1/2 teaspoon paprika

Instructions
 

  • Place black beans, undrained diced tomatoes, vegetable broth, salt and paprika into a large saucepan over medium heat.
  • Simmer soup for 10 minutes, until all of the ingredients are heated through. Blend soup with an immersion blender until smooth. Continue to simmer soup over medium heat for another 5-10 minutes.
