Banana Sugar Cookie Bars

Soft and chewy cookie bars made with mashed bananas in the cookie dough. Everyone will love the soft and chewy texture of the cookie bars and the delicious sweet banana flavors. They make the perfect easy chewy cookie bars for just about any occasion.

The cookie dough is made similar to a classic sugar cookie dough, except for the addition of mashed bananas in the cookie dough. Evenly spread the cookie dough into a greased square baking dish and bake until the center comes out clean with a toothpick. Let cool completely before cutting into bars and serving.

Banana Sugar Cookie Bars

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup butter, softened
  • 1 large banana, mashed
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, mix butter, mashed banana, and sugar until fluffy. Add in the egg and vanilla extract until smooth.
  • Add in the flour mixture and mix until it is fully combined. Evenly spread the cookie dough into a greased 8-inch square baking dish. Bake for 20-25 minutes.
