Cheesy classic lasagna with a layer of spinach and ricotta cheese. These easy lasagna roll ups are much easier to make then a traditional lasagna. With these roll ups you will be sure to get a bite of the delicious spinach and ricotta cheese mixture. Instead of layering, you place the filling in each individual lasagna strip and cover with marinara sauce and top with cheese. Make these for a healthy and hearty meatless meal. Serve with a side salad or garlic bread.
The filling for these lasagna roll ups is made with ricotta cheese, egg, parmesan cheese, mozzarella cheese and spinach. It is spread evenly over each lasagna noodle and rolled up tightly. They are placed in a baking dish over a layer of marinara sauce and covered with more marinara sauce. And sprinkled with shredded mozzarella cheese. Cover with foil and bake for 30 minutes, uncover and bake until the cheese has fully melted.

Ingredients
  

  • 9 lasagna noodles
  • 8 oz. ricotta cheese
  • 1 large egg
  • 1/2 cup grated parmesan cheese
  • 2 cups shredded mozzarella cheese, divided
  • 1 ( 10 oz.) box frozen spinach, thawed and drained
  • 1 (28 oz.) jar marinara sauce

Instructions
 

  • Preheat oven to 375 F. Cook lasagna noodles according to package directions, drain. In a medium bowl, combine ricotta cheese, egg, grated parmesan cheese, 1 cup shredded mozzarella cheese, and spinach.
  • Evenly spread a thin layer of marinara sauce in a large baking dish. Spread the ricotta spinach mixture on each lasagna noodle. Roll up tightly and place into the baking dish.
  • Cover with the marinara sauce and sprinkle with the remaining shredded mozzarella cheese. Cover with foil and bake for 30 minutes. Uncover and bake for another 5-10 minutes, until the cheese has melted.
