Easy spinach and stuffing bites with parmesan cheese make the perfect appetizer for any holiday, like Thanksgiving or Christmas. They are so easy to make with a box of stove-top stuffing mix and frozen spinach. It takes less than 10 minutes to prepare these easy bites, but they make a delicious appetizer to serve this Thanksgiving. You can even make these bites ahead of time, and reheat them before serving.

The frozen spinach will first need to be thawed and drained according to the package directions. You can also use fresh spinach that is wilted. Mix the spinach with a stove-top stuffing mix, grated parmesan cheese, melted butter, eggs, salt and pepper. Roll the mixture into balls using a cookie scoop and place them onto greased baking sheets. Bake until lightly browned and crispy.

Ingredients
  

  • 1 ( 10 oz.) box stove-top stuffing mix
  • 1 ( 10 oz.) box frozen spinach, thawed and drained
  • 1/2 cup grated parmesan cheese
  • 1/2 cup melted butter
  • 2 large eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions
 

  • Preheat oven to 350 F. Cook frozen spinach according to package directions, drain. In a large bowl, combine stove-top stuffing mix, spinach, grated parmesan cheese, melted butter, eggs, salt and pepper.
  • Roll mixture into bite sized balls. Place onto a large greased baking sheet. Bake for 25-30 minutes.
