Chewy chocolate brownie cups topped with a classic soft and chewy red velvet flavored cookie dough. These brookie cups combines the two classic desserts into one delicious treat that everyone will love. These brookie cups would make the perfect Valentine’s day or Christmas themed desserts because of the red velvet cookie dough.

The brownie batter is quick and easy to make because all of the ingredients are whisked together in a large bowl. You can also use a box of brownie mix instead if you prefer. For the cookie dough, it is made just like a classic red velvet cookie dough, using red food coloring to make it red. Evenly divide the brownie batter into the cups. Divide the cookie dough over the brownie batter. Bake until each cup comes out clean in the center with a toothpick.

• 1 cup all-purpose flour
• 1 cup granulated sugar
• 1/2 cup cocoa powder
• 1/2 teaspoon salt
• 1/2 teaspoon baking soda
• 2 large eggs
• 1/2 cup butter, melted
• 1 teaspoon vanilla extract
• 1/2 cup butter, softened
• 1 cup granulated sugar
• 1 1/2 cups all-purpose flour
• 2 tablespoons cocoa powder
• 1/2 teaspoon salt
• 1/2 teaspoon baking soda
• 1 large egg
• 1 teaspoon vanilla extract
• red food coloring

Instructions

 

• Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a large bowl, whisk together flour, sugar, cocoa powder, salt, and baking soda. Add in eggs, melted butter, and vanilla extract. Mix until smooth.
• In a medium bowl, whisk together flour, cocoa powder, salt, and baking soda. In a large bowl, combine butter with sugar until smooth. Add in egg and vanilla extract, and mix until smooth.
• Add in the flour mixture and mix until it is fully combined. Add in the red food coloring and mix until it is fully red.
• Evenly divide the brownie batter between the prepared muffin cups. Divide the cookie dough over the brownie batter. Bake for 20-25 minutes.
