Red Velvet Brookie Cups

Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 large eggs
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 2 tablespoons cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • red food coloring

Method
 

  1. Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a large bowl, whisk together flour, sugar, cocoa powder, salt, and baking soda. Add in eggs, melted butter, and vanilla extract. Mix until smooth.
  2. In a medium bowl, whisk together flour, cocoa powder, salt, and baking soda. In a large bowl, combine butter with sugar until smooth. Add in egg and vanilla extract, and mix until smooth.
  3. Add in the flour mixture and mix until it is fully combined. Add in the red food coloring and mix until it is fully red.
  4. Evenly divide the brownie batter between the prepared muffin cups. Divide the cookie dough over the brownie batter. Bake for 20-25 minutes.
