Red Velvet Brookie Cups

Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 large eggs
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 2 tablespoons cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • red food coloring

Instructions
 

  • Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a large bowl, whisk together flour, sugar, cocoa powder, salt, and baking soda. Add in eggs, melted butter, and vanilla extract. Mix until smooth.
  • In a medium bowl, whisk together flour, cocoa powder, salt, and baking soda. In a large bowl, combine butter with sugar until smooth. Add in egg and vanilla extract, and mix until smooth.
  • Add in the flour mixture and mix until it is fully combined. Add in the red food coloring and mix until it is fully red.
  • Evenly divide the brownie batter between the prepared muffin cups. Divide the cookie dough over the brownie batter. Bake for 20-25 minutes.
