Quick and easy mini taco bites for a tasty appetizer that goes great with taco night, or as a game day appetizer. Creamy refried beans and spicy taco meat are filled in tortilla chip scoops and topped with cheese, tomato, and olives. You can make these taco bites vegetarian by just using the refried beans and cheese without the taco meat. You can replace the beef with chicken instead. There are many ways that you can customize this easy appetizer.
The taco meat is first made by browning ground beef in a large skillet until no longer pink. Add in taco seasoning and water, let cook until thickened. Arrange the tortilla scoops in a single layer on a baking sheet and place refried beans and taco meat in each scoop. Top with shredded cheddar cheese, diced tomatoes, and sliced olives. Bake until the cheese has fully melted.

Ingredients
  

  • 1 pound ground beef
  • 1 ( 2 oz.) packet taco seasoning
  • 1/4 cup water
  • 1 ( 14 oz.) can refried beans
  • 1 ( 10 oz.) bag tortilla scoops
  • 1 cup shredded cheddar cheese
  • 1 large tomato, diced
  • sliced black olives

Instructions
 

  • Preheat oven to 350 F. Brown ground beef in a large skillet over medium heat, breaking it up with a spatula as it cooks. Drain grease and add in taco seasoning and water. Let heat through for another 5 minutes.
  • Heat refried beans in a microwave-safe bowl until smooth. Place tortilla scoops in a single layer onto a large baking sheet. Evenly divide the refried beans into each chip. Top with the taco meat mixture and sprinkle with shredded cheddar cheese. Top with tomatoes and olives. Bake for 5-10 minutes.
