Oatmeal Chocolate Chip Cookies

Soft and chewy oatmeal cookies with chocolate chips. A combination of a chewy oatmeal cookie, and a classic chocolate chip cookie. These delicious chewy oatmeal chocolate chip cookies are the perfect combination of the two classic cookie flavors. Chocolate chips and oatmeal go together so well. And it so quick and easy to bake these cookies.

The dry ingredients for these cookies, are made with uncooked oats, flour, salt, and baking soda. Butter and both granulated and brown sugar are beat together in a large bowl until fluffy, along with egg and vanilla extract. Add the oatmeal mixture until all of the flour is incorporated. Chocolate chips are then folded into the dough. Refrigerate the dough for at least one hour before baking. This makes sure that the cookies do not spread out too much in the oven. Roll the cookie dough into balls and place on a ungreased baking sheet. Bake for 10-12 minutes.

Ingredients
  

  • 2 cups old-fashioned oats
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips

Instructions
 

  • In a medium bowl, whisk together flour, oats, salt, and baking soda. In a large bowl, beat softened butter with both sugars until fluffy. Add in egg and vanilla extract, beat until smooth.
  • Add the dry ingredients in three additions, beating after each until fully combined. Fold in chocolate chips. Cover and refrigerate for at least one hour.
  • Preheat oven to 350 F. Roll cookie dough into balls and place 2-inches apart on ungreased baking sheets. Bake for 10-12 minutes.
