Oatmeal Chocolate Chip Cookies

Ingredients
  

  • 2 cups old-fashioned oats
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips

Instructions
 

  • In a medium bowl, whisk together flour, oats, salt, and baking soda. In a large bowl, beat softened butter with both sugars until fluffy. Add in egg and vanilla extract, beat until smooth.
  • Add the dry ingredients in three additions, beating after each until fully combined. Fold in chocolate chips. Cover and refrigerate for at least one hour.
  • Preheat oven to 350 F. Roll cookie dough into balls and place 2-inches apart on ungreased baking sheets. Bake for 10-12 minutes.
