Oatmeal Chocolate Chip Cookies

Ingredients
  

  • 2 cups old-fashioned oats
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips

Method
 

  1. In a medium bowl, whisk together flour, oats, salt, and baking soda. In a large bowl, beat softened butter with both sugars until fluffy. Add in egg and vanilla extract, beat until smooth.
  2. Add the dry ingredients in three additions, beating after each until fully combined. Fold in chocolate chips. Cover and refrigerate for at least one hour.
  3. Preheat oven to 350 F. Roll cookie dough into balls and place 2-inches apart on ungreased baking sheets. Bake for 10-12 minutes.
