Soft and chewy classic chocolate chip cookies sandwiched with a delicious creamy vanilla frosting filling. These easy and delicious sandwich cookies make the perfect dessert for any occasion. Everyone will love the chocolate chip cookie flavor combined with the creamy vanilla filling.

The cookie dough, is made like a classic chocolate chip cookie dough and baked as usual. To save time, you can also use refrigerated chocolate chip cookie dough, and bake it according to package directions. Let the cookies cool completely before filling. To make the vanilla filling, all of the ingredients are mixed together in a large bowl until smooth. Once the cookies have cooled down completely, place the filling onto half of the cookies. Sandwich them with the remaining cookies.

Chocolate Chip Sandwich Cookies

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips

Ingredients for Filling

  • 1/2 cup butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons milk

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with both sugars until fluffy. Add in the egg and vanilla extract and mix until smooth.
  • Add in the flour mixture, and mix until it is fully combined. Fold in the chocolate chips. Roll the cookie dough into balls, and place them onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes. Let cool completely.
  • For the filling, combine butter with powdered sugar, vanilla extract, and milk until smooth. Place the filling evenly onto half of the cooled cookies. Sandwich with another cookie.
