Homemade Mexican Pizza

Cheesy homemade Mexican pizzas with flour tortillas filled with refried beans and taco meat. All covered with enchilada sauce and cheddar cheese. The pizzas are topped off with your favorite taco toppings, such as tomatoes, sliced black olives, or any other of your favorite toppings that you would like. You can easily make these Mexican pizzas vegetarian, by leaving the taco meat out and just using vegetarian refried beans as the filling.
To make the tortillas crispy, they are baked in the oven to crisp before adding the other ingredients on top. Brown the ground beef in a large skillet until browned and no longer pink. Add in taco seasoning and salsa, let cook until thickened. Spread refried beans over four of the tortillas along with 1/4 of the ground beef mixture. Place the remaining tortillas on top and spread with enchilada sauce, and cover with shredded cheddar cheese. Top with tomatoes, olives and any other toppings that you would like. Bake until the cheese has fully melted.

Ingredients
  

  • 1 pound ground beef
  • 1 ( 2 oz.) packet taco seasoning
  • 1/2 cup salsa
  • 8 flour tortillas
  • 1 ( 16 oz.) can refried beans
  • 1 ( 14 oz.) can red enchilada sauce
  • 2 cups shredded cheddar cheese
  • 1 large tomato, diced
  • 1 can sliced black olives

Instructions
 

  • Preheat oven to 400 F. Place tortillas onto a baking sheet and bake for 3 minutes, flip and bake for another 3 minutes. Brown ground beef in a large skillet over medium heat, breaking it up with a spatula as it cooks, until it is no longer pink. Drain grease and return meat to skillet.
  • Add in taco seasoning and salsa. Let cook for another 5 minutes. Heat refried beans in a microwave safe dish until smooth. Evenly spread refried beans over four tortillas. Top with ground beef and the other flour tortillas. Place enchilada sauce over each pizza and sprinkle with shredded cheddar cheese. Top with tomatoes and sliced olives. Bake for 8-10 minutes.
