Fresh Strawberry Cupcakes

Moist delicious cupcakes with bits of fresh strawberry all though out the cupcake. Topped with a creamy and sweet strawberry buttercream frosting. The cupcake batter is so quick and easy to make, no mixer is needed except for the frosting. Just a bowl and a whisk is needed to prepare the batter. These cupcakes are great to bake for Valentines day, or for any time of the year, with the sweet strawberry flavor of these cupcakes.

To make these simple cupcakes, all of the ingredients are whisked together in a large bowl and a whisk. Pieces of fresh strawberry are mixed in the cupcake batter and divided into cupcake liners. Bake until they are completely cooked though and let cool down completely before frosting. To make the sweet and creamy fresh strawberry buttercream frosting, butter is mixed with strawberries, powdered sugar, vanilla extract and milk until smooth and creamy. Frost and decorate the cupcakes.

Ingredients

  

• 1 1/2 cups all-purpose flour
• 1 cup granulated sugar
• 1/2 teaspoon salt
• 2 teaspoons baking powder
• 2 large eggs
• 1 cup milk
• 1/2 cup vegetable oil
• 1 teaspoon vanilla extract
• 1 cup fresh strawberries, diced

Ingredients for Strawberry Buttercream Frosting

• 1/2 cup butter, softened
• 2 tablespoons smashed strawberries
• 2 1/2-3 cups powdered sugar
• 1 teaspoon vanilla extract
• 2 tablespoons milk

Instructions

 

• Preheat oven to 350 F. Line a 12 cup muffin pan with cupcake liners. In a large bowl, whisk together flour, sugar, salt and baking powder. Add in eggs, milk, vegetable oil and vanilla extract and whisk until smooth.
• Fold in diced strawberries. Evenly divide the cupcake batter between the prepared liners. Bake for 18-20 minutes. Let cool completely.
• Beat softened butter with smashed strawberries, powdered sugar, vanilla extract and milk until creamy.
• Spread or pipe frosting onto cupcakes.
