Fresh Strawberry Cupcakes

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 2 large eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, diced

Ingredients for Strawberry Buttercream Frosting

  • 1/2 cup butter, softened
  • 2 tablespoons smashed strawberries
  • 2 1/2-3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk

Instructions
 

  • Preheat oven to 350 F. Line a 12 cup muffin pan with cupcake liners. In a large bowl, whisk together flour, sugar, salt and baking powder. Add in eggs, milk, vegetable oil and vanilla extract and whisk until smooth.
  • Fold in diced strawberries. Evenly divide the cupcake batter between the prepared liners. Bake for 18-20 minutes. Let cool completely.
  • Beat softened butter with smashed strawberries, powdered sugar, vanilla extract and milk until creamy.
  • Spread or pipe frosting onto cupcakes.
