Beef stew is a great hearty winter meal, but instead of using beef stew meat for this meal, frozen meatballs are used. This stew has all of the classic flavors of a beef stew, with carrots and potatoes. But using meatballs in place of beef stew meat makes this meal more budget friendly and it is easier to prep. All of the ingredients are cooked slow in the crock-pot, making it the perfect meal for any day of the week. Serve with a side of bread for a hearty family friendly meal.

You only need seven ingredients to make this meal. Just a bag of frozen meatballs, potatoes, carrots, a can of diced tomatoes along with the juices and beef broth. All seasoned with dried oregano and dried parsley. It is so quick and easy to prepare this meal, just add all of the ingredients into a large crock-pot and let it cook over low heat for eight hours. Or over high heat for 5-6 hours.

Crock-Pot Meatball Stew

Ingredients
  

  • 1 ( 12 oz.) bag frozen meatballs
  • 2 medium russet potatoes, peeled and cubed
  • 2 medium carrots, peeled and sliced
  • 1 ( 14 oz.) can diced tomatoes, undrained
  • 2 cups beef broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried parsley

Instructions
 

  • Place meatballs into a large crock-pot along with potatoes, carrots, undrained diced tomatoes, and beef broth. Sprinkle with dried oregano and dried parsley.
  • Cover and cook on low heat for 8 hours, or on high for 5-6 hours.
