Creamy Pepper Jack Mac and Cheese

Creamy and cheesy mac and cheese made with two types of cheese. Both pepper jack and cheddar cheese is used in the cheese sauce. The mac and cheese is slightly spicy with the pepper jack cheese. Making it perfect for a non traditional side dish or meal.

The mac and cheese sauce is made similar to a classic mac and cheese sauce, except for the addition of shredded pepper jack cheese, along with the cheddar cheese. Cook the sauce until both of the cheese are melted and the sauce has thickened. Mix the sauce with cooked pasta and serve.

Creamy Pepper Jack Mac and Cheese

Ingredients
  

  • 16 oz. elbow pasta
  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 2 1/2 cups milk
  • 1 1/2 cups shredded pepper jack cheese
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions
 

  • Cook the pasta according to package directions. Drain and place into a large bowl. Melt the butter in a large saucepan over medium heat.
  • Add in the flour, and cook for a minute to brown. Add in the milk, both pepper jack and cheddar cheese, salt, and pepper. Continue to cook over medium heat, until the cheese has fully melted and the sauce has thickened. Mix with the cooked pasta.
