Mint Oreo Cookie Cups

Soft and chewy cookie cups made with tons of delicious mint and chocolate flavors. Mint extract and crushed mint Oreo cookies are folded into the cookie dough. Everyone will love these easy and delicious cookie cups this holiday season.

The cookie dough is made similar to a classic sugar cookie dough, except for the addition of mint extract and crushed mint Oreo cookies folded into the cookie dough. Evenly divide the cookie dough between the paper liners and bake until each cookie cup comes out clean with a toothpick.

Mint Oreo Cookie Cups

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon mint extract
  • 1 cup crushed mint Oreo cookies

Instructions
 

  • Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy. Add in the egg and mint extract.
  • Add in the flour mixture, mix until it is fully combined. Fold in the crushed mint Oreo cookies. Evenly divide the cookie dough between the paper liners. Bake for 12-15 minutes.
