Tender chicken tenders with a crispy Cajun seasoned cornmeal crust that is a easy and simple dinner that is quick to prepare. Baked chicken is one of my go to quick weeknight meals, and that is because there are so many different ways that you can cook and season them. This chicken is quick and easy to make, it can be ready for dinner in 45 minutes. Serve with your favorite vegetable side dishes for an easy and tasty dinner.

The chicken is first coated in a mixture of beaten eggs and milk in a shallow dish. The chicken tenders are then covered in a mixture of cornmeal and Cajun seasoning, covering them completely. The Cajun seasoning goes great with the crispy cornmeal crust and gives the chicken a little bit of a spicy flavor. Place the chicken tenders onto a large greased baking sheet. Bake until the chicken is tender and no longer pink and the cornmeal crust is crispy.

Cornmeal Crusted Chicken Tenders

Ingredients
  

  • 1 pound chicken tenders
  • 2 large eggs
  • 1/4 cup milk
  • 1/2 cup cornmeal
  • 1 teaspoon cajun seasoning

Instructions
 

  • Preheat oven to 375 F. In a shallow dish, whisk together eggs and milk.
  • In another shallow dish, combine the cornmeal and Cajun seasoning. Dip chicken tenders into the egg and milk mixture, letting the excess drip off.
  • Fully coat the chicken tenders into the cornmeal mixture. Place chicken onto a large greased baking sheet. Bake for 30-35 minutes.
