Classic crispy potato skins covered with cheddar cheese and crispy bacon. Potato skins are a classic appetizer to serve for just about any occasion, but especially for game days. The potatoes are crispy and cheesy, making the perfect appetizer. Serve topped with sour cream or green onions for a delicious appetizer.

The potatoes are first baked until they are fork tender. Once the potatoes have cooled enough to handle, cut them in half and scoop out the middles of each potato. Rub the potatoes with more olive oil and bake until crispy. Add shredded cheddar cheese and crispy cooked and crumbled bacon inside of each potato. Bake for a few more minutes until the cheese has fully melted.

Ingredients
  

  • 4 large potatoes
  • olive oil
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon

Instructions
 

  • Preheat oven to 400 F. Poke holes in potatoes and rub with olive oil. Place onto a baking sheet, bake for one hour. Let cool slightly. Cut potatoes in half, scoop out middles.
  • Rub potatoes with more olive oil, bake for 10-12 minutes. Top each potato with cheese and bacon. Bake for another 5-10 minutes.
