Mini Chocolate Cheesecakes

You only need five simple ingredients to make these mini chocolate cheesecakes. The filling is baked in muffin tins over whole Oreo cookies. It takes less than 10 minutes to prepare the filling for these cheesecakes. This easy chocolate dessert makes a delicious treat for any occasion. You can top these mini cheesecakes with whipped cream for a delicious dessert.

The only five ingredients that you need are Oreo cookies, cream cheese, sugar, cocoa powder, and eggs. Each Oreo cookie is placed into one paper-lined muffin tin. The remaining ingredients are all beat together in a large bowl with a mixer until smooth and creamy. Using a cookie scoop or spoon, evenly divide the chocolate cheesecake batter between the muffin tins over the Oreo crusts. Bake until the cheesecakes are done in the center. Let cool completely at room temperature, then refrigerate until serving.

  • 12 Oreo cookies
  • 2 ( 8 oz.) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1/4 cup cocoa powder
  • 2 large eggs

Instructions
 

  • Preheat oven to 350 F. Line a 12 cup muffin tin with paper liners. Place Oreo cookies in each liner.
  • In a large bowl with a mixer, beat softened cream cheese with sugar, cocoa powder, and eggs. Beat until smooth. Evenly divide cheesecake batter between the muffin cups. Bake for 25-30 minutes.
