Zucchini Parmesan Bites

Easy and tasty zucchini parmesan bites make the perfect appetizer to serve with just about any meal. Zucchini rounds are coated with grated parmesan cheese and breadcrumbs. They are then baked until crispy. These zucchini bites taste great served dipped with marinara sauce or ranch dressing.

The zucchini is sliced into round slices and placed into a large mixing bowl. Mix the zucchini slices with olive oil, grated parmesan cheese, breadcrumbs, and Italian seasoning. Spread the zucchini slices out in a single layer onto a greased baking sheet. Bake until the zucchini is crispy.

Ingredients
  

  • 2 large zucchini, sliced into rounds
  • 2 tablespoons olive oil
  • 1/2 cup grated parmesan cheese
  • 1/2 cup breadcrumbs
  • 1 teaspoon Italian seasoning

Instructions
 

  • Preheat oven to 400 F. In a large bowl, mix zucchini with olive oil, parmesan, breadcrumbs, and Italian seasoning. Spread out in a single layer on a greased baking sheet.
  • Bake for 25-30 minutes.
