Greek Pasta Salad

Quick and easy pasta salad filled with all of the classic Greek flavors. The pasta is mixed with tomatoes, olives, bell pepper, and crumbled feta cheese. Olive oil and lemon juice are added to the pasta as a delicious dressing. This salad goes great as a summer dish that you can serve as a side dish, or as a main meal with a side salad.

I used rotini pasta for this salad, but any small-shaped pasta will work. Cook the pasta and rinse with cold water to stop the cooking process. Mix with cherry tomatoes, onion, bell pepper, olives, feta cheese, olive oil, lemon juice, and season with dried oregano. You can either serve the pasta right away, or you can cover and refrigerate until you are ready to serve.

Ingredients
  

  • 16 oz. rotini pasta
  • 1 pint cherry tomatoes, halved
  • 1/2 cup diced red onion
  • 1 green bell pepper, diced
  • 1 ( 6 oz.) can black olives, sliced
  • 1 cup crumbled feta cheese
  • 1/4 cup olive oil
  • 2 tablespoon lemon juice
  • 1 teaspoon dried oregano

Instructions
 

  • Cook pasta according to package direcrections, drain. Mix with the remaining ingredients. Cover and refrigerate until serving.
