Taco seasoned ground beef with tomatoes and green chilies and canned corn. Topped with crispy tater tots and melted cheddar cheese, this casserole is warm and filling. The perfect meal to start off the fall season. Casseroles are the perfect colder weather meal. And while the weather here is still not cool enough for the fall season yet, this casserole is so easy to prepare that I like to make it any time of the year. You can prepare it ahead of time as well or even freeze it for another day. Before baking, cover the baking dish and freeze until you are ready to bake.

Ground beef is browned in a large skillet over medium heat. Drain the grease and return the meat to the skillet. Mix rotel with the juices, taco seasoning and drained corn into the ground beef. Let the mixture cook for another 5 minutes to thicken the sauce. Spread the mixture out into a greased baking dish and place the frozen tater tots on top of the beef mixture in a single layer. Bake until the tater tots are browned and crispy. Top with shredded cheddar cheese and bake for a couple more minutes, until the cheese is melted.

Ingredients
  

  • 1 pound ground beef
  • 1 ( 15 oz.) can rotel
  • 1 ( 5 oz.) packet taco seasoning
  • 1 ( 15 oz.) can corn, drained
  • 1 ( 16 oz.) bag frozen tater tots
  • 2 cups shredded cheddar cheese

Instructions
 

  • Preheat oven to 350 F. Brown ground beef in a large skillet over medium heat. Drain and return meat to the skillet. Add in rotel with juices, taco seasoning, and drained corn.
  • Cook mixture for another 5 minutes over medium heat. Spread the beef mixture out into a greased 9x13-inch baking pan. Top with tater tots.
  • Bake for 35-40 minutes. Top with cheese and bake for another 3-5 minutes, until the cheese is melted.
