Soup is the perfect healthy cold weather meal. This sweet potato soup is a healthy meat free meal that is so quick and simple to make. There is no need to cook the sweet potatoes before adding to the soup, because the potatoes cook until tender in the vegetable broth and milk. And blended along with garlic and celery to create a delicious soup. Serve this soup with grilled cheese or crackers for a healthy winter meal.

The garlic, onion and celery are first cooked in olive oil to soften them. Then the sweet potatoes are added and cooked for a minute to lightly brown them. Vegetable broth, milk, salt and pepper are added to the soup, and simmered until the potatoes are tender. You can use either an immersion blender or blend the soup in batches until the soup is smooth. If you would rather larger pieces of sweet potato in the soup, you can blend less. Return the soup to medium heat and let cook for a few more minutes to heat it through.

Ingredients
  

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 medium onion, diced
  • 2 stalks celery, diced
  • 4 cups cubed and peeled sweet potatoes
  • 2 cups vegetable broth
  • 2 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions
 

  • Heat olive oil in a large saucepan over medium heat. Cook minced garlic, onion and celery in the oil until softened and fragrant. Add in sweet potatoes and cook for another minute.
  • Pour in vegetable broth and milk. Season with salt and pepper. Continue to simmer over medium low heat until sweet potatoes are tender. Puree soup with either an immersion blender or blend soup in batches until smooth. Return soup to saucepan and continue to cook for another 5-10 minutes to heat through.
