Southwestern Chicken and Rice Casserole

This easy cheesy and spicy chicken and rice casserole is delicious and so easy to make. Chicken is mixed with rice and black beans and baked with cheese to create a creamy and cheesy casserole. It is slightly spicy with the salsa. It goes great with any side dish, such as cornbread or your favorite vegetables. This casserole is easy to make with leftover cooked chicken.

For the chicken, you can use leftover chicken or a shredded rotisserie chicken. Mix the chicken with rice, black beans, cilantro, salsa, cream of chicken soup, and milk together in a large bowl. Spread into a large greased baking dish. Top with cheese and bake until the cheese has fully melted.

Ingredients
  

  • 1 pound cooked and diced chicken
  • 2 cups cooked rice
  • 1 ( 15 oz.) can black beans, drained
  • 1 teaspoon chopped cilantro
  • 1/4 cup salsa
  • 1 ( 14 oz.) can cream of chicken soup
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese

Instructions
 

  • Preheat oven to 350 F. In a large bowl, combine chicken, rice, black beans, cilantro, salsa, cream of chicken soup, and milk. Spread mixture out into a greased baking dish.
  • Top with cheese. Bake for 25-30 minutes.
