Easy homemade chicken noodle soup makes the perfect meal for a cold winter day. This classic chicken noodle soup is so quick and easy to make, you can have it ready on the table in less than 30 minutes. Chicken with egg noodles and celery are the traditional ingredients to make a bowl of chicken noodle soup. Every thing cooks together in one large pot. Serve warm with a side of garlic bread or a side salad for a lighter meal.

For this soup, you can use either leftover or rotissery chicken to make this meal simple. Every thing is all cooked together in one pot. Diced onion, carrots and celery are cooked in olive oil until the vegetables are softened. Add in the remaining ingredients and let cook until all of the ingredients are heated through and the egg noodles are cooked through.

Homemade Chicken Noodle Soup

Ingredients
  

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 medium carrots, peeled and sliced
  • 2 stalks celery, diced
  • 1 pound chicken, cooked and diced
  • 16 oz. egg noodles
  • 1 teaspoon dried basil
  • 4 cups chicken broth

Instructions
 

  • Heat olive oil in a large stock pot over medium heat. Cook onion, carrots and celery until softened. Add in chicken, egg noodles, basil and chicken broth.
  • Cook for 15-20 minutes, until the egg noodles are cooked.
