Greek Chicken Wraps

Quick and easy meal with minimal cooking and prep. These Greek chicken wraps make a great meal with some leftover cooked chicken or even a rotisserie chicken. Wraps make a great summer lunch or dinner, because with no cooking, there is no need to heat the house up. You can serve these as a quick and easy summer dinner, or you can prepare them to take along to a picnic this summer.

For the chicken, you can use up some leftover cooked and diced chicken. Greek ingredients are added to the chicken, such as cucumber, kalamata olives, and feta cheese. Hummus is spread over tortillas and topped with the remaining ingredients. Roll the tortilla into a wrap and serve with your favorite chips or a light side salad.

Ingredients
  

  • 1 pound cooked and diced chicken
  • 1 pint cherry tomatoes, halved
  • 1 small cucumber, diced
  • 1/4 cup kalamata olives, chopped
  • 1/2 cup feta cheese
  • 1/2 cup hummus
  • 8 flour tortillas

Instructions
 

  • Heat chicken until heated through. Evenly spread hummus over one side of each tortilla. Add chicken to each, along with cherry tomatoes, cucumber, olives, and feta cheese.
  • Roll up and serve.
