Sweet and fluffy cupcakes with the classic flavors of gingerbread. These cupcakes are fluffy with warm spices, like cinnamon and ginger. All topped off with a delicious creamy cream cheese frosting. The cupcake batter has molasses and classic gingerbread spices mixed into it. Giving these cupcakes a delicious fluffy cupcake that is perfect to bake this holiday season.

The cupcakes are started with all of the dry ingredients mixed into a large bowl. Then eggs, milk, oil, molasses and vanilla extract are whisked into the same bowl. Evenly divide the cupcakes into a prepared cupcake pan lined with paper liners. Bake until they come out clean with a toothpick and let the cupcakes cool completely before frosting. To make the creamy cream cheese frosting, softened cream cheese and softened butter are creamed with a mixer along with powdered sugar, milk and vanilla extract until smooth and creamy. Frost cupcakes and decorate.

Gingerbread Cupcakes

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 2 large eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 1/2 cup molasses
  • 1 teaspoon vanilla extract

Ingredients for Cream Cheese Frosting

  • 4 oz. cream cheese, softened
  • 1/2 cup butter, softened
  • 2 cups powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat oven to 350 F. Line a 12 cup cupcake pan with cupcake liners. In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, ginger and nutmeg.
  • Add in eggs, milk, vegetable oil, molasses and vanilla extract, whisk until smooth. Evenly divide cupcake batter between the lined cupcake pan. Bake for 18-20 minutes. Let cool completely.
  • For the cream cheese frosting, in a large bowl using either a hand or stand mixer, beat softened cream cheese with softened butter until fluffy. Add in powdered sugar, milk and vanilla extract and beat until smooth. Pipe or spread frosting onto cupcakes.
