Monster Cookie Ice Cream Sandwiches

Soft and chewy classic monster cookies filled with peanut butter and oatmeal. Along with chocolate chips and M&Ms. And stuffed with creamy vanilla ice cream. Everyone will love these easy cookie ice cream sandwiches for a fun and delicious summer treat this year.

The cookie dough is made like a classic monster cookie dough, then baked like until fully cooked through. Let the cookies cool completely. Then place ice cream onto half of the cookies, and sandwich with the remaining cookies. Store in the freezer until serving.

Monster Cookie Ice Cream Sandwiches

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1 cup quick oats
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extact
  • 1 cup M&Ms
  • 1 cup chocolate chips
  • vanilla ice cream

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, oats, salt, and baking soda. In a large bowl, mix together butter, peanut butter, granulated sugar, and brown sugar until fluffy.
  • Add in the egg and vanilla extract and mix until smooth. Add in the flour mixture, mix until it is fully combined. Fold in the M&Ms and chocolate chips. Use a cookie scoop to place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes. Let cool completely.
  • Place ice cream onto half of the cookies and sandwich with the remaining cookies. Store in the freezer until serving.
