Lemon Shortbread Cookies

Buttery and delicious classic shortbread cookies filled with delicious lemon flavors. These easy shortbread cookies uses lemon juice instead of vanilla extract to give these easy cookies a delicious lemon flavor. These cookies are perfect to bake for any spring or summer themed occasion.

The only four ingredients that you need for these cookies is butter, powdered sugar, lemon juice, and flour. All of the ingredients are mixed together in a large bowl until combined. Roll the cookie dough into balls, and flatten each one slightly. Place the cookies onto a large ungreased baking sheet. Bake until the bottom of the cookies are lightly browned.

Lemon Shortbread Cookies

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup powdered sugar
  • 2 tablespoons lemon juice
  • 2 cups all-purpose flour

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, combine butter with powdered sugar until fluffy. Add in the lemon juice, and mix until smooth. Add in the flour, mix until it is fully combined.
  • Roll the cookie dough into balls, and flatten each one slightly. Place onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
