Easter Egg Cake Balls

Easter is this weekend, and these Easter egg shaped cake balls are perfect for making for the occasion. A quick and easy sweet vanilla cake crumbled with frosting and covered with chocolate. Cake balls are fun and easy treat to make for just about any holiday or occasion. You can shape into anything that you want. There are so many ways that you can decorate these treats, with sprinkles or any other of your favorite decorations.
For the cake part, you can either bake a homemade vanilla cake, or you can use a premade box mix and bake it according to package directions.  After the cake has baked, let it cool completely before crumbling. Crumble the cake into a large bowl and mix with the can of frosting. Form the the mixture into egg shapes and set onto plates. Either refrigerate or freeze for at least 30 minutes. Melt the candy melts in the microwave in 30 second intervals, stirring after each until fully melted and smooth. Dip each cake ball into the chocolate and set back onto plates. Sprinkle with any decorations. Let sit until the chocolate has set.

Ingredients
  

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 3 large eggs
  • 2 cups milk
  • 1 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 ( 15 oz.) container vanilla frosting
  • 10 oz. chocolate candy coating
  • sprinkles

Instructions
 

  • Preheat oven to 350 F. In a large bowl, whisk together flour, sugar, salt, baking powder, and baking soda. Add in eggs, milk, vegetable oil, and vanilla extract, whisk until smooth.
  • Pour cake batter into a greased baking dish. Bake for 30-35 minutes. Let cool completely. Crumble cake into a large bowl. Mix with frosting. Form mixture into egg shapes. Set onto plates. Refrigerate for 30 minutes.
  • Melt candy melts acording to package directions, stirring until fully melted and smooth. Dip each cake ball into the chocolate, coating it fully. Set back onto plates, top with sprinkles. Let chocolate set.
