Easter Cake Mix Snickerdoodle Brookie Cups

Easy brownie cups topped with a delicious Easter themed snickerdoodle cookie. These easy brookie cups combines both a soft and chewy chocolate brownie with a soft and chewy snickerdoodle cookie filled with Easter sprinkles. These easy brookie cups are perfect to bake this Easter or spring.

The brownie batter is made by whisking all of the ingredients together in a large bowl until smooth. Then divide the batter between a paper lined muffin pan. For the cookie dough, a box of cake mix is mixed with eggs and vegetable oil until smooth. Then Easter themed sprinkles are folded into the cookie dough. Roll the cookie dough balls, and roll each one into a mixture of granulated sugar and ground cinnamon. Place each cookie over the brownie layers. Bake until each brookie cup comes out clean with a toothpick.

Ingredients

  

• 1 cup all-purpose flour
• 1 cup granulated sugar
• 1/2 cup cocoa powder
• 1/2 teaspoon salt
• 1/2 teaspoon baking soda
• 2 large eggs
• 1/2 cup butter, melted
• 1 teaspoon vanilla extract
• 1 ( 15 oz.) box white cake mix
• 2 large eggs
• 1/2 cup vegetable oil
• 1/2 cup Easter sprinkles
• 1/2 cup granulated sugar
• 1 teaspoon ground cinnamon

Instructions

 

• Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a large bowl, whisk together flour, sugar, cocoa powder, salt, and baking soda. Add in the eggs, melted butter, and vanilla extract until smooth.
• Evenly divide the brownie batter between the prepared muffin pan. In another large bowl, mix together cake mix, eggs, and vegetable oil until smooth. Fold in the sprinkles. In a shallow dish, mix together granulated sugar and ground cinnamon.
• Roll the cookie dough into balls, and roll each one into the cinnamon sugar mixture. Place over each brownie batter. Bake for 20-25 minutes.
