Deviled Egg Potato Salad

All of the flavors of a classic deviled egg made into a creamy and delicious potato salad. This dish is the perfect make-ahead dish to serve as a side dish with some grilled chicken. Or it is perfect to take along to a picnic or potluck. Filled with delicious hard boiled eggs, mayonnaise, and mustard. This potato salad makes the perfect spring or summer side dish. You can prepare this potato salad ahead of time and keep it in the fridge until you are ready to serve. 

The potatoes are first boiled until they are fork-tender. Drain the potatoes and mix with chopped hard-boiled eggs, mayonnaise, mustard, salt, pepper, and chili powder. Either serve right away, or cover and refrigerate the potato salad up to a couple of days before serving. 

Deviled Egg Potato Salad

Ingredients
  

  • 2 pounds russet potatoes, peeled and cubed
  • 5 large eggs, boiled, chopped
  • 1 cup mayonnaise
  • 2 teaspoons mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon chili powder

Instructions
 

  • Place potatoes into a large saucepan and cover with water, bring to a boil over medium heat. Cook until fork-tender. Drain and place into a large bowl.
  • Mix the potatoes with the remaining ingredients. Cover and refrigerate until serving.
