Crock-Pot Chicken Vegetable Soup

Easy chicken and vegetable soup cooked in the crock-pot and made using only five simple ingredients. Using the crock-pot makes weekday dinners so much easier. You can toss everything in the crock-pot in the morning, then by dinner time, you have a warm cooked dinner. Everyone will love this delicious chicken soup filled with mixed vegetables and diced tomatoes. Serve warm with a side of bread or grilled cheese for a delicious meal.

The only five ingredients that you need for this soup is cooked chicken, you can use leftover chicken, rotissery chicken, or a bag of precooked frozen chicken. A bag of frozen mixed vegetables, a large can of diced tomatoes, chicken broth, and Italian seasoning to season. All of the ingredients are mixed together in a large crock-pot. Cover and cook on low until all of the ingredients are heated through together.

Ingredients
  

  • 1 pound cooked and chopped chicken
  • 1 ( 12 oz.) bag frozen mixed vegetables
  • 1 ( 28 oz.) can diced tomatoes, undrained
  • 4 cups chicken broth
  • 1 tablespoon Italian seasoning

Instructions
 

  • Place all of the ingredients into a large crock-pot. Cover and let cook on low for 6-8 hours.
