The easy vanilla cupcake batter is made with only one mixing bowl and no mixer. All of the ingredients are whisked together in a large bowl until smooth. Evenly divide the cupcake batter between lined cupcake liners. Bake until the centers of the cupcakes come out clean with a toothpick. Let the cupcakes cool completely before frosting. For the frosting, beat all of the ingredients together until smooth. Pipe or spread frosting onto each cupcake and decorate.

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Ingredients for Buttercream Frosting

  • 1/2 cup butter, softened
  • 2-3 cups powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat oven to 350 F. Line a 12 cup muffin pan with cupcake liners. In a large bowl, whisk together flour, sugar, salt, and baking powder.
  • Add in milk, vegetable oil, eggs, and vanilla extract, whisk until smooth. Evenly divide cupcake batter between the prepared cupcake liners. Bake for 15-18 minutes. Let cool completly.
  • In a large bowl, beat softened butter with softened butter, powdered sugar, milk, and vanilla extract until smooth. Pipe frosting onto cooled cupcakes.
