Classic Potato Salad

Potato salad is one of the most well known and favorite summer side dishes. Potatoes with mayonnaise, hard boiled eggs, celery and sliced pickles. This potato salad has all of the flavors of a traditional old-fashioned potato salad. Potato salad is my favorite summer side dish, because it is perfect to make ahead and take to potlucks. This potato salad will become your favorite dish to take to barbecues or to serve with any summer meal.

Hard boiled eggs are used in this just like traditional potato salad. To cook the hard boiled eggs, place 4 eggs into a saucepan and cover with water. Bring to a boil, cover and remove from heat. Let the eggs sit in the water for 15 minutes. Peel the eggs and slice into slices. Mix the hard boiled eggs with cubed boiled potatoes, mayonnaise, onion, celery and pickles. Cover and refrigerate until you are ready to serve, or for up to one week.

Classic Potato Salad

Ingredients
  

  • 2 pounds russet potatoes
  • 1 1/2 cups mayonnaise
  • 4 large hard boiled eggs, sliced
  • 1 small red onion, diced
  • 2 stalks celery, diced
  • 1/4 cup sliced pickles
  • 2 teaspoons mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder

Instructions
 

  • Peel and dice potatoes into 1-inch cubes. Place potatoes into a large saucepan and cover with water. Bring potatoes to a boil, cover and let simmer for 15-20 minutes.
  • Drain and rinse potatoes with cold water. Place potatoes into a large bowl and mix with the remaining ingredients. Cover and refrigerate until serving.
