Easy homemade jambalaya made with chicken and smoked sausage. This meal makes a delicious dinner for Mardi Gras or any day of the week. The chicken and sausage are seasoned with Cajun seasoning and cooked with rice and tomatoes. Everything is cooked together in one pot, meaning less dishes to do after. Make this quick and easy meal served with a side of salad or your favorite vegetables and bread.
Everything is all cooked together in one pan, making the clean up easier. Chicken and sausage are cooked together with Cajun seasoning until they are fully cooked through. The remaining ingredients are added to the chicken and sausage and cooked covered until the rice is fully cooked though. This one pot meal is so easy to prepare and cooks quick for an easy weeknight meal.

Chicken and Sausage Jambalaya

Ingredients
  

  • 2 tablespoons olive oil
  • 1 pound chicken, diced
  • 1 pound smoked sausage, sliced
  • 1 tablespoon Cajun seasoning
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 2 stalks celery, diced
  • 1 can diced tomatoes, undrained
  • 1 cup uncooked rice
  • 2 cups chicken broth

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Season chicken and sausage with Cajun seasoning and cook in the skillet until fully cooked through. Add in onion, green pepper and celery. Cook for a minute, until fragrant.
  • Add in diced tomatoes, rice and chicken broth. Cover and let cook for 20-25 minutes, until the rice is cooked through.
