Chicken and Sausage Jambalaya
Ingredients
- 2 tablespoons olive oil
- 1 pound chicken, diced
- 1 pound smoked sausage, sliced
- 1 tablespoon Cajun seasoning
- 1 medium onion, diced
- 1 green bell pepper, diced
- 2 stalks celery, diced
- 1 can diced tomatoes, undrained
- 1 cup uncooked rice
- 2 cups chicken broth
Instructions
- Heat olive oil in a large skillet over medium heat. Season chicken and sausage with Cajun seasoning and cook in the skillet until fully cooked through. Add in onion, green pepper and celery. Cook for a minute, until fragrant.
- Add in diced tomatoes, rice and chicken broth. Cover and let cook for 20-25 minutes, until the rice is cooked through.
