Cheesy chicken and potato casserole topped with crispy bacon. This easy casserole is a great meal that the whole family will enjoy. You can even use leftover chicken or a rotissery chicken for this casserole. Tender and slightly crispy potatoes combined with chicken and spices will create a hearty and slightly spicy meal. Serve with a side of your favorite vegetables and a side salad for a tasty hearty meal.
All of the ingredients in this casserole are combined together in a large baking dish, except for the cheese and bacon. The casserole is covered with foil and baked until the potatoes are tender. Cheddar cheese and crumbled bacon are added onto the casserole and baked uncovered until the cheese has fully melted. This casserole is slightly spicy seasoned with paprika and hot sauce. But you can remove them for a more family friendly casserole.

Ingredients
  

  • 2 pounds russet potatoes, cubed
  • 2 tablespoons olive oil
  • 2 teaspoons hot sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 pound chicken, cooked and diced
  • 2 cups shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon

Instructions
 

  • Preheat oven to 400 F. Cut potatoes into 1-inch cubes and spread out into a large baking dish. Mix with olive oil, hot sauce, cooked chicken, salt, pepper, garlic powder and paprika.
  • Cover with foil and bake for 40-45 minutes. Uncover and top with cheese and bacon. Bake uncovered for another 15-20 minutes.
