Black Eyed Pea Salad

Quick and easy bean salad made with black eyed peas, tomatoes and bell pepper. This salad makes a great side dish to go with any meal and a great dish for any occasion. You can make this salad ahead of time and serve it at a picnic, or you can make it for a new years day meal. This salad is great for make-ahead, it is quick and easy to make this dish ahead of time the day before you need it.

You only need six simple ingredients to make this dish. Just black eyed peas, cherry tomatoes, bell pepper, celery, olive oil, and balsamic vinegar. All of the ingredients are mixed together and either served right away or you can cover the salad and refrigerate until you are ready to serve.

Ingredients
  

  • 2 ( 15 oz.) cans black eyed peas, drained
  • 1 pint cherry tomatoes, halved
  • 1 green bell pepper, diced
  • 2 stalks celery, diced
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar

Instructions
 

  • Combine all of the ingredients in a medium bowl. Cover and refrigerate until serving.
