In a large bowl, beat softened butter with corn syrup, powdered sugar and peppermint extract until a thick dough forms.
Form mixture into balls and flatten slightly. Place onto plates and refrigerate for at least 30 minutes.
Melt chocolate chips in the microwave in 30 second intervals, stirring after each until fully melted and smooth. Dip each peppermint patty into the melted chocolate, fully coating.
Set onto plates and refrigerate for at least 30 minutes, until the chocolate has set.
