- In a large bowl, beat softened butter with corn syrup, powdered sugar and peppermint extract until a thick dough forms.
- Form mixture into balls and flatten slightly. Place onto plates and refrigerate for at least 30 minutes.
- Melt chocolate chips in the microwave in 30 second intervals, stirring after each until fully melted and smooth. Dip each peppermint patty into the melted chocolate, fully coating.
- Set onto plates and refrigerate for at least 30 minutes, until the chocolate has set.
