Cut string cheese sticks in half. In a shallow dish place flour, in another shallow dish whisk together eggs and milk.
In another shallow dish, combine breadcrumbs with Italian seasoning. First coat cheese sticks in flour, then coat in the egg mixture. Fully coat in the breadcrumb mixture. Place onto plates and freeze at least one hour.
Heat vegetable oil in either a large skillet or in a deep fryer. Fry cheese sticks until golden browned on all sides.
