Pour the chocolate into a 8-inch baking dish. Refrigerate until the chocolate has set. Place the white chocolate chips in another microwave safe bowl.
Heat in the microwave in 30 second intervals, stirring after each until fully melted and smooth. Stir in peppermint extract and green food coloring. Mix until fully green.
Pour over the chocolate layer. Refrigerate until the chocolate has set. Place the remaining bag of chocolate chips in a microwave safe bowl.
Heat in the microwave in 30 second intervals, stirring after each until fully melted and smooth. Pour over the green chocolate layer. Refrigerate until fully set. Cut into squares.
