Place warm water into a measuring cup. Whisk in granulated sugar and active dry yeast. Let sit for 10 minutes.
In a large bowl, combine flour and salt. Add in olive oil and yeast mixture. Mix until a dough forms. Knead dough out onto a floured surface until smooth.
Place dough into a large greased bowl. Cover with plastic wrap or a towel. Let rise for 1-2 hours, or until doubled in size.
Preheat oven to 375 F. Deflate dough and divide into small balls. Roll each into a long thin bread stick. Place bread sticks onto large greased baking sheets. Cover and let rise for another 30-60 minutes. Bake for 15-18 minutes.
