Place the flour into a microwave-safe bowl, and heat in the microwave for 40 seconds. In a large bowl, mix together butter and sugar until fluffy. Add in vanilla extract, and mix until smooth.
Add in the heated flour, mix until it is fully combined. Fold in the sprinkles and chocolate chips. Roll the cookie dough into balls, and place them onto a large plate. Freeze for at least 20 minutes.
Place the white chocolate chips into a microwave-safe bowl, and heat in the microwave until it is fully melted and smooth. Use a fork to fully coat each truffle into the melted chocolate. Set onto a plate, and let sit until the chocolate has completely set.
