Easter Cake Mix Snickerdoodle Brookie Cups

Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 large eggs
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1 ( 15 oz.) box white cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup Easter sprinkles
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon

Method
 

  1. Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a large bowl, whisk together flour, sugar, cocoa powder, salt, and baking soda. Add in the eggs, melted butter, and vanilla extract until smooth.
  2. Evenly divide the brownie batter between the prepared muffin pan. In another large bowl, mix together cake mix, eggs, and vegetable oil until smooth. Fold in the sprinkles. In a shallow dish, mix together granulated sugar and ground cinnamon.
  3. Roll the cookie dough into balls, and roll each one into the cinnamon sugar mixture. Place over each brownie batter. Bake for 20-25 minutes.
