Preheat oven to 375 F. Roll out pie crust and place it into a 9-inch round pie dish. In a large bowl, combine sliced apples, both sugars, flour, cinnamon, lemon juice and vanilla extract.
Place apple pie filling into the pie crust. For the crumble topping, in a medium bowl, cut softened butter into flour and brown sugar until crumbly. Sprinkle crumble over the pie filling. Bake for 50-55 minutes.
