Creamy Colby Jack Mac and Cheese

  • 16 oz. elbow pasta
  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 2 1/2 cups milk
  • 1 cup shredded cheddar cheese
  • 8 oz. colby jack cheese
  • 1/2 cup grated parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Method
 

  1. Cook pasta according to package directions, drain. In a medium saucepan over medium heat, melt butter. Add in flour and cook for a minute to brown. Pour in milk, all three cheeses, salt and pepper.
  2. Continue to cook over medium heat, until all of the cheeses have fully melted and the sauce has thickened. Mix sauce with pasta.
