Creamy Colby Jack Mac and Cheese

Creamy and cheesy mac and cheese with three different types of cheese. Cheddar cheese, cobly jack and grated parmesan cheese are all used in this cheesy mac and cheese. The creamy sauce is made on the stove-top and mixed with cooked pasta. The three different types of cheese go perfectly together in this dish. It makes a delicious side dish to go alongside any dinner.
Elbow pasta is first cooked according to the package directions and placed into a large bowl. Meanwhile, while the pasta is cooking, you can start the creamy three-cheese sauce. Flour is cooked with melted butter until browned, then the milk, all three types of cheese, salt, and pepper are added to the sauce. Cook until all of the cheese has melted and the sauce has thickened. Mix with the cooked pasta.

Ingredients
  

  • 16 oz. elbow pasta
  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 2 1/2 cups milk
  • 1 cup shredded cheddar cheese
  • 8 oz. colby jack cheese
  • 1/2 cup grated parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions
 

  • Cook pasta according to package directions, drain. In a medium saucepan over medium heat, melt butter. Add in flour and cook for a minute to brown. Pour in milk, all three cheeses, salt and pepper.
  • Continue to cook over medium heat, until all of the cheeses have fully melted and the sauce has thickened. Mix sauce with pasta.
