Preheat oven to 400 F. Place one pie crust into a round pie plate. Melt butter in a large saucepan over medium heat. Cook minced garlic and onion until softened. Add in flour, cook for a minute to brown.
Pour in chicken broth, milk, and seasonings. Cook over medium heat, while whisking constantly until thickened. Add in chicken and vegetables for a few more minutes until heated through.
Place mixture into the pie crust. Top with the remaining pie crust. Seal edges, make four slits at the top. Bake for 45-50 minutes.
