Classic Chicken Pot Pie

Easy classic warm chicken pot pie makes the perfect comfort food meal to enjoy this winter. This classic chicken pot pie is filled with chicken, mixed vegetables and a creamy homemade sauce. It is delicious served with a side of your favorite sides, such as mashed potatoes and bread.

For the pie crust, you can either make your own pie crust, or use a premade pie dough instead. Place one pie crust into a greased pie plate. For the sauce, melt butter and cook garlic and onion until fragrant. Add in flour and cook until browned. Pour in chicken broth, milk, and seasonings. Cook until the sauce has thickend. Stir in cooked diced chicken and a bag of frozen mixed vegetables. Let heat through for a few minutes. Add to pie crust and top with the remaining pie dough, sealing the edges. Bake until the crust is golden browned.

Ingredients
  

  • 2 pie crusts
  • 4 tablespoons butter
  • 2 cloves garlic, minced
  • 1/2 cup diced onion
  • 4 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1 pound cooked chicken
  • 1 ( 10 oz.) bag frozen mixed vegetables

Instructions
 

  • Preheat oven to 400 F. Place one pie crust into a round pie plate. Melt butter in a large saucepan over medium heat. Cook minced garlic and onion until softened. Add in flour, cook for a minute to brown.
  • Pour in chicken broth, milk, and seasonings. Cook over medium heat, while whisking constantly until thickened. Add in chicken and vegetables for a few more minutes until heated through.
  • Place mixture into the pie crust. Top with the remaining pie crust. Seal edges, make four slits at the top. Bake for 45-50 minutes.
